Grilled Chicken and Spinach Salad

- 16 ounce(s) chicken, quartered, rinsed and patted dry
- 1 teaspoon(s) salt
- 1 teaspoon(s) pepper
- 1 package baby spinach
- 1 onions, sliced
- 8 kalmata olives
- 4 tablespoon(s) light Italian dressing
- 1 orange, peeled and chopped
Directions
- Preheat grill to medium-high heat.
- Combine salt and pepper. Rub chicken with mixture.
- Place chicken on the grill. Close cover and grill 8 minutes on each side. Set aside.
- Place spinach in a large bowl.
- Toss the onion, olives, and orange on top of the spinach.
- Chop chicken into bite size pieces and add to salad.
- Dress the salad lightly with dressing and serve.
