Cranberry, Apple and Raisin Chutney

Cranberry, Apple and Raisin Chutney

Ingredients

  • 1 cup(s) raisins
  • 16 floz water
  • 1/3 cup(s) brown sugar
  • 14 3/4 mL sherry
  • 1/2 mL apple, chopped
  • 1/4 cup(s) lemon juice
  • 1 teaspoon(s) ginger, minced
  • 3 cup(s) cranberries
  • 1/2 cup(s) chopped walnuts

Directions

    1. Bring water to a boil in a heavy large saucepan.
    2. Add raisins. Remove from the heat and let stand for 15 minutes.
    3. Drain, reserving 1/2 cup of water.
    4. Pour reserved water back into the saucepan and add sugar, sherry and apples. Stir and increase heat to a boil.
    5. Cook for 5 minutes.
    6. Remove from the heat; stir in lemon juice, and ginger.
    7. Add cranberries and cook until they begin to pop, about 8 minutes.
    8. Stir in raisins and cook for another 2 minutes.
    9. Cover and refrigerate for 8 hours or overnight before serving.
    10. Stir in walnuts just before serving.
