1 cup(s) raisins
16 floz water
1/3 cup(s) brown sugar
14 3/4 mL sherry
1/2 mL apple, chopped
1/4 cup(s) lemon juice
1 teaspoon(s) ginger, minced
3 cup(s) cranberries
1/2 cup(s) chopped walnuts
Directions
Bring water to a boil in a heavy large saucepan.
Add raisins. Remove from the heat and let stand for 15 minutes.
Drain, reserving 1/2 cup of water.
Pour reserved water back into the saucepan and add sugar, sherry and apples. Stir and increase heat to a boil.
Cook for 5 minutes.
Remove from the heat; stir in lemon juice, and ginger.
Add cranberries and cook until they begin to pop, about 8 minutes.
Stir in raisins and cook for another 2 minutes.
Cover and refrigerate for 8 hours or overnight before serving.
