Puree of Cauliflower

This is the flower power of puree recipes. Cauliflower is a healthy vegetable packed with nutrients that is incredibly delicious. Easy to make and has just a few ingredients.

Recipe

  • 1 medium head of cauliflower
  • 3 tablespoon(s) unsalted butter
  • 1 teaspoon(s) sea salt
  • 1/4 teaspoon(s) freshly ground black pepper
  • 1 teaspoon(s) dijon mustard

Directions

    1. Chop a head of cauliflower into small florets.
    2. Steam or boil until tender.
    3. Measure and reserve 0.75 cup of the water used to cook the cauliflower.
    4. In a food processor or blender, puree 0.33 of the cauliflower and the reserved water.
    5. Add in the rest of the cauliflower and remaining ingredients. Puree again making sure you have an even puree throughout. You may have to add more water. 
    6. Serve immediately. Top with Parmesan cheese or your favorite chopped herb.
