Puree of Cauliflower
This is the flower power of puree recipes. Cauliflower is a healthy vegetable packed with nutrients that is incredibly delicious. Easy to make and has just a few ingredients.

- 1 medium head of cauliflower
- 3 tablespoon(s) unsalted butter
- 1 teaspoon(s) sea salt
- 1/4 teaspoon(s) freshly ground black pepper
- 1 teaspoon(s) dijon mustard
Directions
- Chop a head of cauliflower into small florets.
- Steam or boil until tender.
- Measure and reserve 0.75 cup of the water used to cook the cauliflower.
- In a food processor or blender, puree 0.33 of the cauliflower and the reserved water.
- Add in the rest of the cauliflower and remaining ingredients. Puree again making sure you have an even puree throughout. You may have to add more water.
- Serve immediately. Top with Parmesan cheese or your favorite chopped herb.
