Heart Smart Corn Fritters
It's okay to be corny, especially when it involves these fritters. Just because they are fritters doesn't mean you need to fret. They are prepared in a healthy fashion. Add them to your recipe repertoire.

- 1 cooking spray
- 1/4 cup(s) chopped onion
- 1/4 cup(s) chopped red pepper
- 2 cup(s) sweet corn kernels
- 1/4 cup(s) all purpose flour
- 1/2 teaspoon(s) baking powder
- 1 dash(es) salt, to taste
- 1 dash(es) black pepper, to taste
- 1/10 cup(s) almond milk
- 1/2 teaspoon(s) hot sauce
- 1 1/2 tablespoon(s) sunflower oil
- 2 cup(s) egg substitute
Directions
- Place a medium saucepan over medium heat and add cooking spray.
- Add the onion and pepper and cook for about 5 minutes.
- Add the corn kernels and continue cooking for a 1 more minute.
- Remove from the heat and set aside.
- In a large bowl, mix together, flour, baking powder, salt and black pepper.
- Add the egg substitute, almond milk, and hot pepper sauce and stir mixing well.
- Add the corn mixture and stir.
- Place a skillet over medium-low heat and add oil.
- When oil is hot, place 5 tablespoons of the fritter mixture into the pan.
- Using a spatula, flatten them and cook until lightly browned.
- Turn and cook the other side until lightly browned.
- Once cooked remove excess oil from fritters and serve.
