Chicken and Tomato Salad
Want an Italian staple that packs a protein punch? Spice up your favorite Caprese salad with grilled chicken. Leaf those other boring salads alone and opt for this goodie.

- 4 chicken breasts
- 1 tablespoon(s) balsamic vinegar
- 4 tablespoon(s) olive oil
- 3 tomatoes, cut into 1-inch wedges
- 1 cucumber, peeled, cut in half, sliced into 1/4 inch pieces
- 2 scallions, cut into 1-inch thin slices
- 8 ounce(s) low fat mozzarella cheese, cut into 1/4 inch pieces
- 1/4 cup(s) green olives
- 1 tablespoon(s) basil
- 1 tablespoon(s) lemon juice
- 1 dash(es) salt
- 1 dash(es) pepper
- 1 teaspoon(s) white sugar
- 1 floz water
Directions
- Mix together balsamic vinegar, 1/2 tablespoon of olive oil, white sugar, and water.
- Combine marinade with chicken pieces in a plastic bag and marinate for 1 hour.
- Add 1/2 tablespoon of olive oil to skillet and sauté chicken for about 10 minutes.
- Chop chicken into 1/2-inch cubed pieces.
- Set aside.
- In a large bowl, add tomatoes, cucumber, scallions, mozzarella cubes and olives to the bowl.
- Place the basil and lemon juice in a small bowl and slowly add the remaining olive oil, mixing with a fork.
- Season with salt and pepper.
- Add the chopped chicken cubes.
- Pour the dressing over the salad and toss until combined.
- Serve.
