Chicken and Tomato Salad

Chicken and Tomato Salad

  • 4 chicken breasts
  • 1 tablespoon(s) balsamic vinegar
  • 4 tablespoon(s) olive oil
  • 3 tomatoes, cut into 1-inch wedges
  • 1 cucumber, peeled, cut in half, sliced into 1/4 inch pieces
  • 2 scallions, cut into 1-inch thin slices
  • 8 ounce(s) low fat mozzarella cheese, cut into 1/4 inch pieces
  • 1/4 cup(s) green olives
  • 1 tablespoon(s) basil
  • 1 tablespoon(s) lemon juice
  • 1 dash(es) salt
  • 1 dash(es) pepper
  • 1 teaspoon(s) white sugar
  • 1 floz water

Directions

    1. Mix together balsamic vinegar, 1/2 tablespoon of olive oil, white sugar, and water.
    2. Combine marinade with chicken pieces in a plastic bag and marinate for 1 hour.
    3. Add 1/2 tablespoon of olive oil to skillet and sauté chicken for about 10 minutes. 
    4. Chop chicken into 1/2-inch cubed pieces. 
    5. Set aside.
    6. In a large bowl, add tomatoes, cucumber, scallions, mozzarella cubes and olives to the bowl.
    7. Place the basil and lemon juice in a small bowl and slowly add the remaining olive oil, mixing with a fork.
    8. Season with salt and pepper.
    9. Add the chopped chicken cubes.
    10. Pour the dressing over the salad and toss until combined.
    11. Serve.
