Slow-Cooked Healthy Chicken Fricassee

- 2 tablespoon(s) olive oil
- 4 chicken legs, divided into drumstick and thigh joints, remove skin
- 1/8 cup(s) flour
- 4 shallots, diced
- 2 cloves garlic, crushed
- 1/2 cup(s) sliced button mushrooms
- 4 waxy potatoes, peeled and chopped
- 2/3 ounce(s) rosemary, chopped
- 60 mL cooking dry white wine
- 1 1/2 cup(s) low sodium chicken stock, warmed
- 1 bay leaf
- 1 teaspoon(s) salt, to taste
- 1/2 teaspoon(s) pepper, to taste
Directions
- In a small bowl, add flour.
- Dip chicken pieces in flour to get an even coat.
- In an oiled skillet over medium heat, place chicken pieces and cook until golden brown. Remove and set aside.
- Add shallots to skillet and cook for 3 minutes, stirring often. Add garlic, mushrooms, potatoes, and rosemary, and cook for another 2 minutes.
- Add wine and bring to a boil. Allow to simmer and reduce for 1 minute.
- Transfer all ingredients into a slow cooker and pour in the stock.
- Add chicken and bay leaf to slow cooker, cover and cook on low for 5-6 hours.
- Season as necessary, serve warm.
