Vegan Blueberry Flapjacks

- 1 cup(s) unbleached all-purpose flour
- 1/10 cup(s) unsweetened applesauce
- 6 teaspoon(s) baking powder
- 1/8 teaspoon(s) salt
- 1/8 teaspoon(s) nutmeg
- 1/8 teaspoon(s) cinnamon
- 1 cup(s) almond milk
- 1 large mashed banana
- 1/2 cup(s) blueberries
Directions
- Combine the flour, applesauce, baking powder, salt, nutmeg, and cinnamon in bowl and mix.
- Mix in dairy- free milk and mashed banana and whisk together until batter is smooth.
- Measure 1/2 cup of batter onto a hot skillet or griddle. Add a few blueberries evenly.
- When bubbles appear on the upper surface of the pancake , lift with a spatula and flip it on the other side and add a few more blueberries.
- Cook the pancake for 1-2 minutes until browned.
- Remove from the pan. Top with maple syrup and fruit of your choice.
