Vegan Burger
The all-American burger just got veganized! This homemade patty is packed with protein. It tastes delicious with the perfect blend of veggies and seasonings. Top it with vegan "cheese" for good measure. You won't miss the usual suspects.

- 1/2 cup(s) spinach
- 1 tablespoon(s) olive oil
- 1 tablespoon(s) leek, chopped
- 1 leek, chopped
- 2 garlic loves, minced
- 2 cup(s) black beans, drained and washed
- 10 1/2 ounce(s) tofu, chopped
- 1 teaspoon(s) chili powder
- 1 teaspoon(s) curry powder
- 1 1/2 cup(s) panko bread crumbs
- 6 Whole wheat hamburger roll
Directions
- Boil spinach for 2-3 minutes, driain and place on paper towels and pat dry.
- Saute leek and garlic on warmed skillet for 2-3 minutes. Add additional ingredients except bread crumbs to skillet and cook for about 5 minutes or until vegetables are tender and black beans are softened. Add spinach and mix cooking for additional minute.
- Add mixture to food processor or blender and blend for 30 seconds, or until smooth.
- Place mixture in a large bowl and add bread crumbs, stir and mix well. Let cool until can be handled. Once mixture is cooled, form patty sized burgers and set on a plate. Chill for 30 minutes.
- When ready to cook, add 1 tbsp. oil to skillet and cook on both sides evenly, about 8-10 minutes. Place on toasted bun. Add vegan cheese to make into a vegan cheese burger.
- Top with favorite condiments and lettuce, tomato and a pickle if you choose! Enjoy!
