Bay Shrimp Toast

- 1 cup(s) low fat ricotta cheese
- 4 ounce(s) can shrimp, rinsed and drained
- 2 tablespoon(s) low fat mayonnaise
- 1 ounce(s) low fat yogurt
- 1 ounce(s) Irish Mist liqueur
- 1 tablespoon(s) lemon juice
- 1 tablespoon(s) parsley
- 1 dash(es) salt, to taste
- 1 dash(es) pepper, to taste
- 16 ounce(s) cocktail rye bread
- 30 small shrimp, cooked and peeled
Directions
- In a medium bowl, combine the ricotta cheese, shrimp, mayonnaise, yogurt, liqueur, lemon juice, parsley, salt, and pepper.
- Stir until ingredients are smooth.
- Arrange the slices of bread on a baking sheet.
- Broil the toast for 2 to 3 minutes on each side.
- Spread one side of each slice with the shrimp mixture, and return to the broiler and cook until mixture browns.
- Remove from the broiler and place cooked shrimp onto of each slice.
- Serve warm.
